Mango Pickle, also known as Aam ka Achaar, is a popular condiment in Indian cuisine. It is made from raw mangoes that are chopped or sliced and then pickled in a mixture of spices, salt, oil, and sometimes vinegar or lemon juice.
To prepare Mango Pickle, raw mangoes are first washed, dried, and then chopped into pieces or sliced thinly, depending on personal preference. The mango pieces are then mixed with salt and left to marinate for a few hours or overnight. This step helps to draw out excess moisture from the mangoes.
Once the mangoes have marinated, they are mixed with a blend of spices such as mustard seeds, fenugreek seeds, turmeric powder, red chili powder, asafoetida, and sometimes additional spices like fennel seeds or nigella seeds. The spice mixture is added to the mangoes and mixed well to ensure even coating.
The mango pickle mixture is then transferred to a clean, dry jar and covered with oil to preserve it. Some variations of mango pickle may also include the addition of garlic, ginger, or green chilies for extra flavor and heat.
Mango pickle is known for its tangy, spicy, and slightly sour flavor, which develops as it matures over time. It can be enjoyed as a condiment with rice, roti, paratha, or any Indian meal, and it adds a burst of flavor to dishes with its bold and aromatic taste.
